Cannon Green - Full Time Salary (Based on Experience) Expires on Jun 10, 2018 - 5 years - Position: Food & Beverage Director Department: Management Reports To: Easton Porter Group Senior Management Role: This position is a full time exempt position within our company. Summary: Responsible for operations on food and beverage, events, and property finances. Focus on oversight and assistance in management at Cannon Green with goal of facilitating productivity and efficiency across departments. Exciting opportunity to develop career with growing company. (P) Qualifications and Skills: - Must have at least 5 years of operations and food and beverage experience. - Prior hotel experience a plus. - Must be energetic, a self-starter, and able to work in a fast-paced environment. - Collaborative and team oriented. (P) Essential Functions: Must possess strong communication skills, both verbal and written, and demonstrate outstanding leadership abilities. Must be able to delegate responsibilities, organize complex projects, and establish priorities consistent with business objectives and philosophies. Must have a positive attitude and a courteous demeanor with all customers, staffers, and vendors. Must be able to work well with others and help with other responsibilities as needed in order to maintain an environment of teamwork. (P) Hiring: - Hiring profiles develop roles and responsibilities, required skills for each service position - Interviewing assist managers in screening potential candidates, conducting interviews, and collecting all required new hire documentation - Onboarding - ensure new hires are onboarded and trained according to company standards of service (P) Training: - Steps of service - define steps required for both tableside + wine service with take-home handouts of training steps for each level - Skill Certifications - develop materials, written tests, and checklist for certification after the initial training period - Training Plan -- review existing materials, streamlining combination of written and floor instruction for use in the a la carte operations, and separate event service - Shadow training - identify lead servers to receive the full training to become the leads with new hires working with them for their first week - Steps of Service -- document the program and train the managers so they own it going forward - Liquor Service TIPS/ServSafe training and certifications - HR -- administration best practices for operations - Labor Pool compile and manage a database for servers, bartenders, food runners (P) Forecast & Scheduling: - Weekly forecast rolling 10-day restaurant forecast for all service and support staff - Monthly forecast labor cost review of to-date costs, for needed adjustments - Approaching Overtime controls and evaluation (P) Operations: - This job will routinely require running service on the floor for events and the restaurant from pre-shift to close - Review and assist with F&B operations weekly and day-of procedures and best practices, training, culinary offerings, food and cuisine details and preparation, menu engineering, wine list creation, steps of service - Continuing training operations/ building the customer base profitability, Advanced Ops Review with staff, Scheduling, BEO, Training, Steps of Service, Pre-meal and Post-Events checklists and management. - Building maintenance and key engineering projects support and evaluation. - Regularly assess internal communications between teams and across properties to maximize efficiency and mitigate misunderstandings and ensure critical information is communicated to staff clearly and in a timely fashion. (P) Accounting and Financials: - We will train you on our system & controls tools for weekly financial and monthly reports and analysis labor costs, menu engineering, COGS, and P&L. - Perform regular Avero reporting to better understand trends and analytics per property, making adjustments where necessary. - In conjunction with EP Accounting Department, support the management teams at the property level in completing month-end in-depth reports for ownership, reviewing actual sales and accounting trends. (P) Job Specifications: - Outstanding organizational and time management skills. - Ability to multitask and prioritize and delegate daily workload. - Ability to handle sensitive material with the utmost discretion and confidentiality. - Ability to stand for extended periods of time, 8 to 12 hours. - Be able to lift 40+ pounds. - Be able to count and handle currency accurately. - Successfully carry a tray of food and/or beverages.
