Food and Beverage Manager Club: Big Canoe Property Owners Association, Inc. Location: Jasper, GA Position: Food and Beverage Manager Facilities: Georgia Mountain Community of Big Canoe, between Jasper and Dawsonville, Georgia, as it stands today, started in 1972 when it began to be developed. They named the property Big Canoe because the site was once inhabited by Cherokee and Woodland Indians whose history, combined with the quiet mountains, all relate to the canoe. The lands inhabitants go back thousands of years. The Paleo Indians lived in this area as long as 4,000 years ago. Artifacts of their civilization can still be seen in Big Canoe, where they left a curious set of rock mounds within Indian Rocks Park, 50 of nearly 1500 acres naturally preserved within Big Canoe. Later the Cherokee who still have a large presence in North Carolina inhabited this land. The entire area is rich in mineral deposits and the nations first gold rush was actually in nearby Dahlonega. Once news of larger strikes in California reached the area, miners abandoned the area and headed west. Just west of Big Canoe, a man named Sam Tate, who ran a hotel on the Federal Road, discovered marble deposits on his land. Mr. Tate started a very successful quarry in the town of Tate and supplied the stone used to create the Lincoln Memorial. Marble quarries still actively mine the stone in Marble Hill and Tate today. While the Tate family mined the marble, they found veins of valuable stone extended well beyond their property. Colonel Tate, Sam Tates grandson, proceeded to buy up as much of the surrounding land as he could including what is today Big Canoe. The Tate family built cabins for the miners to live in the area and a community school, named Wolf scratch School, which today houses the tennis center. History tells the story of children hearing wolves scratching on the door of the school, and thus the name Wolfscratch. A house was built in 1913 with two chimneys, for the school principal and teacher. Later the house became the principal residence for Steve and Lucille Tate. It burned down in 1959. Today a conference center stands next to these two chimneys, on the site of the old house. Following the death of Steve Tate, the Wolfscratch property was sold and was unused for a number of years. Today, the Property Owners Association (POA) owns the common amenities, roads, Sconti Clubhouse, Canoe Lodge, recreational facilities including Golf, Fitness, Swim Club, Racquet Club and the Marina, and maintains and operates these facilities. Job Summary: The F&B Manager will have full budget and personnel responsibility for Mountains Grille, The Black Bear Pub and The Veranda. The duties include, but are not limited to: Hiring, Firing, Evaluations, Payroll, Inventory, Maintenance, Budget Preparation and Promotions. He/She will report to the Asst. Clubhouse Manager and will work closely with The Executive Chef and The Banquet/Special Event Manager to ensure the highest levels of productivity, operational efficiency and guest satisfaction. This position will provide direct supervision for all the front-of-the-house Food and Beverage Staff. He/She should communicate on a daily basis with the Asst. Clubhouse Manager to discuss the overall status of the business unit. Maintains and submits reports on timely bases for presentations and discussion with the Asst. Clubhouse Manager. Assist in the taking of, observing and testing of the monthly physical inventories; reviews the current pricing of inventories and their extensions; submits copies of all inventories to the accounting department. Development and submittal of annual budget for the approval process. Meet or exceeds all monthly budgets for member dining profitability as defined by the established budget. Handles all official inspections of the Food and Beverage facility by City or State Health Departments. Make sure the facility complies with OSHA and other applicable safety laws. Keeps current on all service contracts and work orders. Manages and maintains accurate personnel records for all front of the house Food and Beverage employees. Sets up, maintains, reviews, and evaluates controls within the Restaurant necessary to meet the needs required by the operation. Schedules live entertainment for clubhouse venues and issues contracts for hire. Develops wine menus and specialty cocktail menus with supervisors. Responsibilities: Direct responsibility for hiring, firing and evaluation of Mountains Grille, Black Bear Pub and Veranda personnel. Establish and maintain Service Standards and training, in conjunction with the Asst. Clubhouse Manager. Ensure that all team members are meeting or exceeding established standards. Responsible for the procurement, development and maintenance of a well-trained and service-minded operational organization. Conduct weekly staff meetings with key personnel. The purpose is to provide information, but more importantly, to bring about understanding, cooperation and coordination between the department. Responsible for maintaining adequate staffing within the dollar amounts allowed by the budget, but always keeping customer satisfaction paramount. Recommend discharge or other disciplinary action based on the policies and procedures of the POA in consultation with Asst. Clubhouse Manager and HR of all employees. The F&B Manager is responsible to prepare all written reports necessary. Coordinates schedules of all personnel to ensure proper coverage while controlling labor costs within established budgets. Controls and maintains all physical assets of the Restaurant in good repair and sees that daily housekeeping procedures are carried out. Responsible for inspection of all front of house equipment to be certain that it is being operated in compliance with city and state laws. Qualifications: Must have a minimum of 5 years of food and beverage experience in club, hotel or restaurant environment, a minimum of which must be 2 years in a management capacity. The ideal candidate should have an outgoing, warm and friendly personality. Food and Beverage must combine vocation, experience and well-rounded knowledge of the Restaurant business with an understanding of the process of managing the key asset of its business: its people. Maintains exemplary attendance. Always complies with site specific, uniform/dress code policies, and ensures staff does the same. Attends all mandatory POA staff meetings.
