MAJOR FOCUS:

* Responsible for the overall cleanliness and sanitation of the Festival Buffet kitchen, including dry storage and all refrigerated storage areas.

ESSENTIAL FUNCTIONS:

* Monitor daily and weekly cleaning schedules as they pertain to the Festival Buffet Kitchen.

* Monitor the overall cleaning and sanitation of established equipment and work areas.

* Complete special cleaning assignments as required by the Department of Health and the Chef on Duty.

* Check in all deliveries and inspect for quality and correct quantities as marked on the invoice. Inspect expiration dates as marked on the case and inform Chef on duty of discrepancies.

* Store all products correctly and in their proper location.

* Ensure that proper food rotation is completed on a daily basis using the FIFO (first in, first out) system.

* Keep all refrigerators clean and floors dry are all times, sweep and mop daily.

* Dry storage room to be clean and dry at all times swept and mopped daily.

* Maintain all deep fryers in the kitchen in a clean and sanitary manner. Change grease when needed and remove in a safe manner to the grease receptacle.

* Complete prep work as directed by chef on duty as per business needs and or staffing levels demand.

* Daily inventory to be submitted to chef on duty by 11AM daily

* Ensure that all hallways surrounding the Festival Buffet kitchen remain clear and free of all hazards. All emergency exit hallways must be clear at all times. Provide exceptional customer service

* Work safely, following all established safety rules and regulations

* Communicates effectively with co-workers, supervisors and guests

* Follow all relevant policies and procedures

ADDITIONAL FUNCTIONS:

* Performs other duties as assigned.

Requirements

REQUIREMENTS/EDUCATION:

* High school diploma or equivalent work experience preferred

* Must have high volume experience as a steward in a hotel casino environment

* Must be able to understand and communicate in English and possess good communication skills.

* Must be friendly and cooperative.

* Must be able to report to work on time as scheduled.

* Must be able to work weekends, holidays and nights as needed.

* Must be able to successfully pass a background check.

* Must present an overall professional appearance and report to work in appropriate attire.
